About this course
Food and beverage is typically one of the highest-revenue and most operationally complex departments in a hotel or hospitality venue. By the end of this course you will be able to explain how a food and beverage department is structured; apply menu engineering principles to evaluate and improve a menu; calculate key cost ratios including food cost percentage and gross profit margin; describe service standards for restaurant, bar, room service, and banquet operations; and identify the primary health, safety, and compliance responsibilities of a food and beverage manager.
